HISTORY & CULTUREIslington is a curated hotel. Corridors and rooms are filled with art and antiques, an ancient, modern and eclectic mix of 30 years of travelling around the world, added together with the historic nature of Islington itself and the owner?s family history in Tasmania.
Islington, built in Regency style in 1847, was one of the first houses built in the dress circle of Hobart. Interestingly, it was built by a hotel owner and over the years has been leased to a number of very prominent and dignified tenants. Then, as now, it has one of the most prime views of Mt Wellington that Hobart can offer. Within the library is a collection from the works of Louisa Anne Meredith, an early settler who wrote of the colony and drew the flora and fauna and is an ancestor of the present owner and a prime infuence on the house and its contents.
With its acre of garden, its history, art and luxury, Islington is fittingly continuing in the direction its original owner, Sarah Hodgson, intended.
FOODOff the marble courtyard at Islington is our French-inspired herb garden. Mint, sage, rosemary, fragrant basil are all on hand to inspire our chef and fuel the flavor in our country kitchen.
At Islington we believe in a real breakfast. From your favourite fresh juice and pot of tea or coffee, preserved fruits from our garden, to whole grain bakery breads and culinary delights from our local farming community. As well, our chef will be there to make perfect farm fresh scrambled eggs, accompanied perhaps with Tasmanian smoked salmon and organic local tomatoes.
Begin the day at a pace that suits your mood - nothing moves faster than your needs; enjoy an espresso coffee in the Morning Room paper in hand with soothing sun warming your back, and later, retire to the conservatory for an early evening cocktail and canapes and plan which of Hobart?s fine eateries will be graced with your presence that evening.
Or, with the assistance of our chef, having planned a bespoke dinner in-house, settle in for a made-to-order meal from today?s seasonal market ingredients cooked just for you. Enjoy it by the burning log wood fire in the company of someone special and a great vintage from our extensive wine cellar.

French doors open onto a sandstone paved terrace with the lawn, yew hedge and garden beyond. Fires crackle at the room end with bookcases astride. And to inspire great thought, on the walls hang the works of the cream of Tasmanian artists in an ever-changing showcase of the best the State offers. Opposite, something to contemplate - a chintz quilt, hand sewn by the Tasmanian ancestor of the owner about the same time Islington was being constructed. And true museum quality.

EVENTSTake the pattern from the floor of an old palace and remake it in black and white marble. At the centre plant a huge olive tree, at one end a log burning fireplace around which you can sit, sprinkle the floor with tables, chairs and settees in cosy groups, flank with a bar and a country kitchen, wrap it all up in a soaring glass cathedral and you have the Conservatory at Islington.
From the impressive arrival at the crab apple lined gravelled turning circle, to the porticoed canopy as you enter Islington, every step has a grandeur and a sense of wonder.
